Coconut Strawberry Thumbprint Cookies

Ingredients:
1 cup (230 g) unsalted butter, softened
⅔ cup (130 g) granulated sugar
2 large egg yolks
1 teaspoon vanilla extract
2 cups (250 g) all-purpose flour
½ teaspoon baking powder
¼ teaspoon salt
1 ½ cups shredded unsweetened coconut (for rolling)
¼ cup strawberry jam (or your favorite jam)
